Ingredients

Instructions

  1. Preheat oven to 425°F. Line large baking sheet with parchment paper.

  5. Once tofu is pressed, crumble or cube it and add to separate bowl. Season with remaining spice mixture: 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp cumin, 1/2 tsp paprika, 1/4 tsp salt, pinch of black pepper. Mix well to coat every piece.
  6. Assembly time! Lay out all 4-6 tortillas on clean work surface for assembly-line efficiency.
  7. Spread red pepper hummus on some wraps and pesto on others (or use one spread for all if you prefer). Spread almost to edges, using about 2 tbsp per wrap.
  8. Layer seasoned tofu and black beans down the center of each wrap, dividing equally among all wraps. Don't overfill - you need to be able to fold them. Each wrap should get roughly 1/6 of the tofu and 1/6 of the beans.
  9. Add Mediterranean toppings: Sprinkle sundried tomatoes, kalamata olives, pepperoncini, and generous amount of crumbled feta cheese down center of each wrap over tofu and beans.
  10. Time to wrap! Fold sides in first (left and right edges fold toward center), then roll from bottom up tightly, tucking as you go. Keep everything enclosed and roll tightly - tight wraps stay together better.
  11. Place wrapped tortillas seam-side down on prepared baking sheet. This helps them stay closed during baking. Space them about 1 inch apart.
  12. Bake at 425°F for 20 minutes until tortillas are crispy and golden brown on outside and everything is heated through.
  13. Remove from oven and let cool 5-10 minutes before cutting or handling - they're hot!
  14. For meal prep: Let cool completely, then wrap each one individually in foil or plastic wrap. Label with date and spread type if alternating.
  15. Store in refrigerator in airtight containers or wrapped individually. Keep up to 5 days.
