The one step that mattersI cut Brussels sprouts evenly for consistent cooking - this is important

If you think you don't like Brussels sprouts, you haven't tried these bang bang Brussels sprouts yet. I created this recipe to pack a punch in the best way possible, transforming these often-maligned vegetables into something truly crave-worthy. The combination of crispy, caramelized Brussels sprouts with a creamy, sweet, and spicy bang bang sauce is absolutely addictive. I've converted so many Brussels sprouts haters with this recipe.

The magic happens when you roast or air fry Brussels sprouts until they're golden brown and crispy on the outside. This high-heat cooking method brings out their natural sweetness and eliminates any bitterness - which is why so many people think they hate Brussels sprouts when they've just never had them cooked properly. Then they get tossed in my homemade bang bang sauce that's a perfect balance of creamy vegan mayo, sweet chili sauce, sriracha heat, and a touch of agave nectar.

What makes this recipe even better is how inclusive it is - it works for vegan, vegetarian, and paleo diets (just use compliant ingredients). Whether I'm serving these at a dinner party, bringing them to a potluck, or just making an impressive side dish for dinner, these Brussels sprouts disappear fast. They're easy to throw together and guaranteed to convert even the biggest skeptics. I make these at least once a week.

About the ingredients

You'll need 1 pound of Brussels sprouts, which is typically one large bag or container. I choose Brussels sprouts that are firm, bright green, and feel heavy for their size. You'll trim the ends and cut them in half (or quarter them if they're very large). Cutting them in half exposes more surface area to heat, creating more crispy, caramelized edges - which is where all the flavor is.

For roasting, I use 2 tablespoons of olive oil or avocado oil. Avocado oil has a higher smoke point, making it ideal for high-heat cooking, but olive oil works beautifully too. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

The bang bang sauce is where the magic happens. It starts with 1/3 cup of vegan mayonnaise (or regular mayo if you're not vegan - I use vegan to keep it inclusive). This creates the creamy base that coats the Brussels sprouts beautifully. Add 2 tablespoons of sweet chili sauce for that sweet-spicy kick - you can find this in the Asian foods aisle of most grocery stores. For heat, I use 1-2 teaspoons of sriracha, adjusting to my spice tolerance (I usually go with 2 teaspoons). One tablespoon of agave nectar or honey balances the heat with sweetness. One teaspoon of rice vinegar adds tanginess and helps thin the sauce slightly. Optional garnishes of sesame seeds and sliced green onions take these from homemade to restaurant-quality - I never skip these.

How I make it

The technique for these Brussels sprouts is all about achieving that perfect crispy exterior. You'll start by prepping the Brussels sprouts - trimming, halving, and tossing with oil and seasonings. This coating of oil is crucial for crisping.

Whether you're using an oven or air fryer, the key is high heat and not overcrowding. In the oven, I spread them in a single layer, cut side down, so they make direct contact with the hot pan. This creates maximum caramelization. In the air fryer, I work in batches if necessary to ensure air circulation. Flip them halfway through cooking for even browning.

While the Brussels sprouts are cooking, whisk together the bang bang sauce. When the sprouts are done - crispy on the outside, tender inside, with lots of caramelized edges - toss them with the sauce and serve immediately. The contrast between the hot, crispy sprouts and the cool, creamy sauce is incredible.

Tips from my kitchen

  • I cut Brussels sprouts evenly for consistent cooking - this is important
  • Don't overcrowd the pan - Brussels sprouts need space to get crispy, not steam
  • The air fryer method creates extra crispy results with less oil
  • Roasting at 425°F in the oven also works great if you don't have an air fryer
  • Make the sauce more or less spicy by adjusting the sriracha - I usually go medium
  • Toss with sauce right before serving to maintain maximum crispiness
  • I add sesame seeds and green onions for garnish and extra flavor - highly recommend
  • For paleo version, use paleo-friendly mayo and sweetener

Ingredients

  • 1 lb Brussels sprouts, trimmed and halved (quarter any extra large ones for even cooking)
  • 2 tbsp olive oil or avocado oil (I prefer avocado oil for high-heat cooking)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/3 cup vegan mayonnaise (or regular mayo if not vegan)
  • 2 tbsp sweet chili sauce (find in the Asian foods aisle)
  • 1-2 tsp sriracha (adjust to your spice preference - I use 2 tsp)
  • 1 tbsp agave nectar or honey
  • 1 tsp rice vinegar
  • Optional: sesame seeds and sliced green onions for garnish (highly recommended)

Instructions

  1. Preheat oven to 425°F (220°C) for roasting, or set air fryer to 375°F.
  2. Trim the stem ends off Brussels sprouts and remove any yellow outer leaves. Cut each in half from top to bottom (quarter any extra large ones).
  3. In a large bowl, toss Brussels sprouts with 2 tbsp oil, 1/2 tsp salt, and 1/4 tsp black pepper until evenly coated.
  4. FOR OVEN: Spread Brussels sprouts in a single layer on a baking sheet, cut side down (this is important for crispiness). Don't overcrowd. Roast 20-25 minutes, flipping halfway, until crispy and golden brown with caramelized edges. FOR AIR FRYER: Place in air fryer basket in a single layer (work in batches if needed). Air fry at 375°F for 15-18 minutes, shaking basket halfway through.
  5. While Brussels sprouts cook, make the bang bang sauce: In a bowl, whisk together 1/3 cup vegan mayo, 2 tbsp sweet chili sauce, 1-2 tsp sriracha, 1 tbsp agave nectar, and 1 tsp rice vinegar until smooth. Taste and adjust - add more sriracha for heat or agave for sweetness.
  6. When Brussels sprouts are done (crispy outside, tender inside, lots of golden-brown edges), transfer to a large bowl.
  7. Add the bang bang sauce and toss quickly until all Brussels sprouts are evenly coated.
  8. Transfer to a serving dish and garnish with sesame seeds and sliced green onions if using. Serve immediately while still crispy!

Questions I get about this one

Can I make these ahead?

You can prep and roast the Brussels sprouts ahead, but add the sauce just before serving. If you sauce them too early, they'll lose their crispy texture as they sit. Reheat the roasted Brussels sprouts in a hot oven or air fryer before saucing.

What exactly is bang bang sauce?

Bang bang sauce is typically a combination of mayonnaise, sweet chili sauce, sriracha or hot sauce, and a sweetener. It originated as a sauce for fried shrimp but works amazingly well on vegetables. The name comes from the flavor "bang" or punch it delivers.

Are these actually spicy?

The spice level is completely adjustable based on how much sriracha or hot sauce you add to the bang bang sauce. Start with 1 teaspoon and add more if you want it spicier. The sweet chili sauce and agave help balance the heat.

Can I use frozen Brussels sprouts?

Fresh Brussels sprouts work best for this recipe because they get crispier. Frozen Brussels sprouts contain more moisture and are harder to get crispy. If you must use frozen, thaw and pat them very dry before roasting.
